My current plan (subject to change and revision from Amy) is to leave it empty for a year or two - just keeping the weeds out and maybe removing the stumps.
After that I've been thinking of either letting grass grow there (effectively getting rid of the flower beds) or finding some low maintenance ground cover.
Consider daylillies. They bloom a lot, you can ignore them, they look good, many are cheap, they come in many colors, and will increase over time. And you can eat them, too, from what I hear.
