So after much reading and app browsing, I decided to pick up an iPhone. I stopped at the Apple store last Thursday, but the folks there said they had too many customers and not enough staff to help me, and could I please come back as early as possible the next day? So I went home and later ordered the phone on-line (wouldn't want to add to their problems at the store by trying to buy something there...)
Today it shipped from China, and it should arrive on Thursday. Meanwhile, I've got a list of about 60 apps to look at in more detail when it gets here. :)
If you've got an opinion or an app to add, here is the list:

I also recommend Labyrinth, though I don't use it often, because it's just plain neat.
Non-Free Apps I liked enough to buy and would buy again:
ListOmni - to do lists and such, there are more expensive ones that sync to computers/the web, but this one does everything I need, which none of the free ones did.
Wurdle - it's basically Boggle.

TWC (The Weather Channel's weather app - more willing to do hourly forecasts, but Wunderground's radar is better)
Shazam (the music detector. CANNOT LIVE WITHOUT IT!!!)

Allrecipes and Epicurious (recipe lookups and fun recipe stuff.)
Dice Bag (I can't not.)
Enigmo (I love this game!!)
FiatLux (has come in useful more than you might think.)
Those are the ones I actually like and recommend.

Both phones need the app.
BUMP; allows me to trade information I select to the other BUMPer, both need the app.
Mine is set up to give SCA name, SCA email, and my phone number.
Other helpful ones are

I have not paid for an app to date, there are enough free ones to cover what I'm interested in for the most part. However, I'd like one to group my contacts by context.

For serious:
Getting files on and off the iPhone is difficult by design. If you don't like iTunes ( I hate it ), there are a variety of off brand ways of transferring files, albeit not usually to the certified area where music, pictures and videos live.
Wifi HD is shamefully bad.
Files looks good, but Files Lite is cripple ware.
FileAid uses ftp as a protocol, seems to have everything Files has, and is free.
The amount of public domain literature that's sold is also embarrassing. I transfered a PDF and an HTML work from Project Gutenberg. The PDF read fine, but HTML was just as good, scaled better, and had a table of contents that worked. These were readable in FileAid.
I used mencoder to make an m4v video that played correctly as well.
