Ok, so have to go to Epcot and see Figment. He's in the Journey into Imagination ride. His ride was much cooler ages ago, but you can't miss seeing my favorite character anyway. :) Also in Epcot is Soarin, which can have a long line but there's video games in the line if it's long enough, so we had fun with that the 1 time we waited longer. Wander around Food & Wine, it's cool but there's not any 1 can't miss thing.
MGM has Muppets, and Rockin Roller Coaster (the single rider line will get you in a little faster if you're in a rush, or just get a fastpass, though the line really wasn't bad when we went), and the new Toy Story ride which was cool but wasn't really worth the 75 minute wait... maybe that will go down by next year since it just opened a few months ago.
Animal Kingdom is great for a relaxing day. Go on the safari first thing in the morning, and the river rapids are supposed to be great but I've never gone when it's warm enough I want to get soaked.
Magic Kingdom you'll want to do all 3 mountains (Space, Splash, Big Thunder), and Buzz Lightyear (which seems to have gotten a little buggy now that it's older, so take the controller on the right, they always work better). Everything else is fun too. Watch the Spectromagic parade at night.
Disney Quest, with the build your own roller coaster thing, does still exist, and is almost right next to Cirque. We found Disney Quest ok but not really worth it. Except for the bumper cars with cannons. :) We didn't try the roller coaster thing though cause I wasn't feeling good and the 3D magic carpet adventure (wearing goggles with the game screen) made me so dizzy I couldn't consider a roller coaster!
