Lunch time experiment.

For lunch I bought a bottle of Diet Coke, Diet Coke with Splenda, and Coke Zero and did a side by side taste test.  Diet Coke is still Diet Coke - I don't like it but I'm used to it.  The Splenda version does a good job of tasting the same without the aspartame after taste.  The new Coke Zero uses less aspartame and a different mix of the ingredients that are in Diet Coke.  To me it tastes like a flat Coke.  I don't notice the aftertaste, but neither is there much of the Coke bite.  Overall, my favorite of the three is the one with Splenda.  Some day I need to try the Coke Zero, Splenda and regular Coke together.

You'll often find acesulfame potassium in foods with artificial sweeteners because it makes the other sweeteners taste sweeter. http://www.ific.org/publications/brochures/acekbroch.cfm (http://www.ific.org/publications/brochures/acekbroch.cfm) is a pretty decent overview of it. And so far, no headaches :)
