The palate cleansing idea comes because we are having a tasting tonight, but it really is a separate question. From my limited research, commercial meaderies have all sorts of suggestions but nothing has be the standard.

Sure - the question is 'what is the accompaniment for the beverage', right? chocolate goes nicely with whiskey, but a cigar is better. I smoke about 1 cigar a year - at the whiskey and cigar party at ICOD.
